Surrounded by pines and birches, Björk Swedish Brasserie was born in the Hotel Village, originally created in the sixties by a brilliant uncle of Giuliana Rosset and recently renovated by her in a perfect nordic style. Main characters of this authentic corner of Northern Europe are the ten comfortable chalets made of wood and stone. The chalets, inspired by the concept of the ancient rascard, a type of Walser construction, are cozy suites, independent from each other, equipped with every comfort.
Fundamental for the success of the project is the contribution of Pelle Agorelius, multifaceted founder of Gastronordic Husmansbord, which selects and awards Swedish producers of quality.
Pelle Agorelius is also the producer of two natural juices that are served by Björk Swedish Brasserie and used in the kitchen for the preparation of some of the dishes: the Blåbär 100% wild blueberry juice and Lingon 100%, lingonberry juice.
Among the first Swedish companies that we encountered in the path of research and selection of original products, we choose Leksands because it is the expression of an authentic and traditional culture that represents the world of Swedish crispbread.
Gianluca Telloli, volcanic passionate winemaker and producer of the Maley cider apple led the Björk Swedish Brasserie project to a unique and unprecedented product: an apple and pear cider that is a perfect match to the flavors of the new Nordic cuisine.
